The pinky thing is easy to get over with training, or mag base extensions. Shoot them a few times. Take them apart and put them back together. Check the follower for left over swarf or debris. Check the feet of the follower for casting residue or anything else that would prevent it from reaching full depth. Sig P365 mags (all of them, from 10 to 17 rounds, and I have them all) are uniformly stiff when new.

The standard P365 will offer the best concealability and you can still use 12-round mags. However the longer frame on the P365 will make for a better shooter. Even with the 12-round extended mag in a std P365 I find I can handle and shoot the P365X better. It might be due to the slight flare at the base of the grip.
